My Mom's Potato Salad

This how my mom makes potato salad and whenever we go somewhere and have to take a dish I am asked to bring this. Thought I would pass it on.

Ingredients

  • white potatoes: 6
  • green pepper: 1
  • Spanish onion: 1
  • eggs: 1
  • cucumbers: 4
  • Hellmanns Mayonnaise: 2
  • yellow mustard: 2 1/2
  • horseradish: 1/3

Instructions

  1. Boil potatoes and cut into cubes, cool.
  2. Cut the vegetables and eggs up to whatever size you prefer.
  3. Combine veggies with potatoes and toss.
  4. Add mayo, mustard, horseradish, salt and pepper to taste. Stir.
  5. Better after it has time to "sit".
